I've recently felt more driven towards light & airy flavors in my creations. My coconut cake is always a hit & I usually make it for birthdays or other special occasions as a last minute throw together. The last few times I had occasion to make my coconut cake, I decided to layer it with pineapple cream filling & give the buttercream a touch of pineapple. Which went over really well, so it became a staple in my go to recipes for cakes.
So naturally, being that its 114 degrees by noon out here, I felt the need to do something a little more tropical. Coincidentally, there was a birthday at work, so I decided to make Pina Colada Cake pops. boy oh boy.....these things were a tremendous hit.
The death by chocolate cake pops that i made the week before didnt even make it to my desk. the Pina Colada pops were even more spectacular. so much so, that my boss wouldnt let me walk the treats to the other departments, so others could be my guineau pigs.....I mean give them a try.....she said "the pops belong on our team & noone else can have any." And yes, that was a quote.
There are a couple ladies at work that have requested their own batches of these little tasty treats. I have to say, I'm looking forward to making these again, because I get first dibs on these bad boys........what??? i have to taste test them! you didnt think i just bake my little heart out & didnt at the very least taste one or two....or 6....or something like that

i'm toying with some new pop ideas........and of course, some new chocolates that i dreamed up the other night.
